Raspberries are woody plants of the genus Rubus in the Rosaceae family. Rubus is mainly a thorny shrub, and the fruit is an aggregate of many small berries, sweet and sour. Raspberry oil is an unsaturated fatty acid.
Raspberry has a unique taste and a pleasant aroma. In life, this food is used more as a fruit. In addition, the scientific use of raspberries can also cure diseases.
Not only that, the flavonoids in raspberries can also improve the blood circulation of the skin, enhance the elasticity of the skin capillaries, and promote the regeneration of skin cells, thus playing a cosmetic role.
Raspberries are harvested from mid-May to early June. At this point, the fruit is fully developed and green, not yet red and ripe. Harvest in batches. After harvesting, remove stems, leaves, receptacles and other impurities. Then pour in boiling water for 2-3 minutes, then remove, and spread out or dry. The final product is preferably one with whole grains, firm yellow-green, acidic and sessile leaf fragments.
Sweet and sour pink raspberries are best paired with sweet sauces and fluffy cakes. Today, I will introduce the raspberry dessert recommended by all pastry chefs.
1. Raspberry Sponge Cake
An empty box is actually a little helper for cooking and baking. An empty Tetra Pak bag does the heavy lifting for you and conjures up the best layer cake. Use it as a mold to stack light sponge cakes, dreamy raspberry mousse, raspberry jam and a final layer of raspberry jelly. Garnish the finished product with some fresh raspberries and mint leaves and you're ready for a raspberry dessert everyone will love!
2. Raspberry Yogurt
The hot summer is the best time to taste fruit desserts! After all, you can't eat ice cream all the time! This dessert has everything you need for a summer dessert: rich fruit, white chocolate, and a light mousse that gives you a subtle sweet and sour taste.

The unique aroma of roses and the soft taste brought by cheese, paired with sweet and sour raspberries, can bring you multiple sensory stimulations~ It is a very anticipated dessert.
Heat the milk, fresh cream and sugar in a pot, turn off the heat after boiling, add the soaked gelatin pieces and stir until melted, then add the rose syrup. Mix well with rose dew, put it into a cup after it cools down for a while, then add lychee jelly, and then put it in the refrigerator to refrigerate until it solidifies (about 4~6 hours)
